01 The idea
Most biryani counters try to cook everything. Al Tarik picked two dishes and gave them all the attention: a beef biryani made with seeraga samba rice, and a tawa beef that goes from the hot iron to your plate.
No long card to scan, no guessing what’s good. Whatever you order here is the thing the kitchen makes all day.
“Only two items.” Not a limitation — the whole point.
03 The rice
Seeraga samba is Tamil Nadu’s own biryani rice — a short, slender grain named for its likeness to seeragam, the cumin seed. It drinks in the masala, and it’s the rice under every plate of Al Tarik’s biryani.

Seeragam means cumin. The grains are small enough to be mistaken for it.
Grain, side by side
Short grain, long flavour — the same rice behind Tamil Nadu’s famous biryanis, from Dindigul to Ambur.
